Nutty Chicken Satay Strips:

Nutty chicken satay strips are low-fat snacks that deliver a jolt of protein from chicken and peanut butter. Also, it is easy to cook, store and carry for your work in the lunch box.

Preparation time: 10 mins

Cooking time: 8 mins

Ingredients:

  • 2 tbsp. chunky peanut butter (without palm oil or sugar).
  • 2 tsp lime juice.
  • 2 skinless, chicken breast fillets cut into thick strips.
  • 1 garlic clove, finely grated.
  • 1 tsp Madras curry powder
  • Few shakes of soy sauce.
  • Cucumber, cut into fingers.
  • Sweet chilli sauce, to serve.

Recipe: Heat oven to 200C and line baking tray with non-stick paper.  Now, in a bowl mix peanut butter with grated garlic, add 1 tsp madras curry powder, a few shakes of soy sauce and lime juice. Mix the ingredient well.

If you feel the mixture is thick you can add boiling water to it for bring the coating consistency. Now add 2 skinless chicken breast fillets which we have already cut into strips to the mixture and mix well. And our chicken is ready to bake.

For baking arrange the chicken on the baking sheet properly so that there is space between the slices and bake it in the oven for 8-10 mins until the chicken gets cooked, but simultaneous it should be kept juicy. After cooked you can serve this with the cucumber, cut into fingers and the sweet chilli sauce.

Also, you can cool it and store in your fridge for 2 days.

Chicken Tikka Burritos:

Chicken tikka burritos is a delicious healthy recipe to add in your meal plan. It is both quick and easy to cook.

Preparation time: 30-45 mins

Cooking time: 30 minutes + Marinating

Ingredients:

  • 4 tbsp Low-fat natural yoghurt.
  • 1 lemon juice.
  • 2 garlic cloves, diced.
  • Thumb size ginger piece, roughly chopped.
  • 1 green chilli, deseeded and diced.
  • ½ a small bunch Coriander, finely chopped, stalks and leaves kept separated.
  • 2 large skinless chicken breasts, cut into pieces.
  • 1 ½ tsp smoked paprika.
  • ¾ tsp Chilli powder.
  • ½ tsp Gram masala.
  • ½ onion, thinly sliced.
  • A small handful Cherry tomato, sliced.
  • Cooked Rice.
  • 4 Roti, warmed.

Recipe: Take ½ of the yoghurt and squeeze lemon juice in it. Now add garlic, ginger, green chilli and coriander stalks to it. Add this mixture to a blender or food processor to make a smooth paste.

Now keep pour the paste into a bowl and add chicken, species and lots of seasoning to it and mix it well. Leave this to marinate for 30 minutes. Divide the mixture between metal skewers, leaving gaps between each piece to ensure they get well charred.

Heat the grill to high. Put the skewers onto a foil-lined baking sheet. Grill for 4-5 minutes on each side until charred and cooked through. Meanwhile, mix the onion and cherry tomatoes with lemon juice and some seasoning. Mix the coriander leaves and remaining yoghurt in the bowl.

And add few drops of lemon juice to it, a little seasoning and some water to loosen. Lastly, divide the rice between 4 roti. Add onion, tomatoes, chicken, coriander yoghurt to roti. Wrap the roti and your chicken tikka burritos is ready to serve.
